This Ginger-Spiced Apple Drizzle Cake is a moist and flavourful cake that is perfect for any occasion! This delicious cake is made with freshly grated apples, ginger spice, and a sweet drizzle that makes it irresistible. Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup melted butter
- 3/4 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup plain Greek yogurt
- 1 cup grated apples
- 1/2 cup walnuts, chopped
- 1/2 cup raisins
- 1/4 cup maple syrup
- 1/2 cup confectioners’ sugar
Directions:
- Preheat oven to 350°F and grease an 8-inch round cake pan with butter.
- In a large bowl, whisk together the flour, baking powder, baking soda, ground ginger, ground cinnamon, and salt.
- In a separate bowl, beat together the melted butter and light brown sugar until light and fluffy. Add the eggs and vanilla extract and mix until combined.
- Add the Greek yogurt and mix until incorporated, then add the dry ingredients and mix until just combined.
- Fold in the grated apples, walnuts, and raisins. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Meanwhile, in a small saucepan over medium heat, bring the maple syrup to a simmer. Simmer for 2-3 minutes, then remove from heat and set aside.
- When the cake is done baking, let it cool slightly before turning it out onto a wire rack. Poke several holes in the top of the cake with a skewer or fork. Drizzle the maple syrup over the cake, then sprinkle with confectioners’ sugar. Serve warm or at room temperature.
