Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups buttermilk
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 4 tablespoons butter, melted and cooled
- 1/2 cup mini marshmallows
- 1/2 cup graham cracker crumbs
- 2 tablespoons melted butter
- 1/4 cup chocolate chips
- Maple syrup, for serving
Directions:
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, eggs, vanilla, and melted butter until combined.
- Add the wet ingredients to the dry ingredients, and whisk until just combined. Gently fold in the marshmallows.
- In a small bowl, mix together the graham cracker crumbs and melted butter until the mixture is crumbly. Set aside.
- Heat a large skillet over medium-high heat. Grease with butter or cooking spray. Using a 1/4 cup measuring cup, scoop the batter into the skillet. Cook for 2-3 minutes, until the edges are golden and the bubbles on the surface start to pop. Flip and cook for an additional 2-3 minutes.
- Repeat with the remaining batter. Serve the pancakes topped with the graham cracker crumb mixture, chocolate chips, and maple syrup.
