Espresso-Soaked Tiramisu Cheesecake
This delicious Espresso-Soaked Tiramisu Cheesecake is a decadent dessert combining the flavors of two classic Italian desserts! A creamy cheesecake is soaked with espresso and topped with a creamy mascarpone topping, then finished off with chocolate flakes and a dusting of espresso powder. A perfect way to end a meal or to share with friends and family!
Ingredients:
- 1 package graham crackers
- 1/2 cup melted butter
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup espresso-flavored liqueur
- 1/2 cup mascarpone cheese
- 1/4 cup heavy cream
- 1/2 cup mini semi-sweet chocolate chips
- 2 tablespoons espresso powder
Directions:
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan with butter.
- In a small bowl, add graham crackers and melted butter. Mix until combined. Press graham cracker mixture into the bottom of the springform pan.
- In a medium bowl, add cream cheese, sugar, eggs, and vanilla extract. Beat until smooth. Pour cream cheese mixture over graham cracker crust.
- Bake for 25-30 minutes, until edges are lightly browned and center is slightly jiggly. Let cool.
- In a small bowl, add espresso liqueur and pour over cooled cheesecake.
- In a separate bowl, add mascarpone cheese, heavy cream, and mini semi-sweet chocolate chips. Mix until combined. Spread mascarpone mixture over espresso-soaked cheesecake.
- Sprinkle with espresso powder and chill for at least 2 hours before serving.
