  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

  • 1/4 cup butter, melted
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed espresso
  • 1/2 cup buttermilk
  • 2 tablespoons mocha syrup
  • Buttercream Frosting:

    • 1/2 cup butter, softened
    • 2-3 cups powdered sugar
    • 2 tablespoons heavy cream
    • 1 teaspoon vanilla extract

    Directions:

    1. Preheat oven to 350°F. Line a muffin tin with cupcake liners.
    2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
    3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
    4. Add the dry ingredients to the wet ingredients and mix until just combined. Next, add the espresso, buttermilk, and mocha syrup and mix until everything is evenly combined.
    5. Fill the cupcake liners about 3/4 of the way full and bake for 15-17 minutes, or until a toothpick inserted into the center comes out clean.
    6. Let the cupcakes cool completely before frosting.
    7. To make the frosting, cream together the butter and 2 cups of powdered sugar. Beat in the heavy cream and vanilla extract. Add the remaining powdered sugar until the desired consistency is reached.
    8. Frost the cooled cupcakes and enjoy!
