Buttercream Frosting:
- 1/2 cup butter, softened
- 2-3 cups powdered sugar
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
Directions:
- Preheat oven to 350°F. Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until just combined. Next, add the espresso, buttermilk, and mocha syrup and mix until everything is evenly combined.
- Fill the cupcake liners about 3/4 of the way full and bake for 15-17 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting.
- To make the frosting, cream together the butter and 2 cups of powdered sugar. Beat in the heavy cream and vanilla extract. Add the remaining powdered sugar until the desired consistency is reached.
