Recipe: Espresso-Infused Tiramisu Cookies
These delicious espresso-infused tiramisu cookies are the perfect dessert or snack. The espresso adds a subtle flavor and the crunchy outside and chewy inside make them irresistible.
Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons espresso powder
- 1/2 cup semisweet chocolate chips
- 1/2 cup chopped walnuts
- 1/2 cup mascarpone cheese
- 1/4 cup powdered sugar
Directions:
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
- Add the espresso powder to the butter mixture and mix until combined. Slowly add in the dry ingredients and mix until a dough forms.
- Fold in the chocolate chips and walnuts.
- Drop heaping tablespoonfuls of dough onto the prepared baking sheet, about two inches apart. Bake for 8-10 minutes, or until golden brown. Allow to cool completely.
- In a small bowl, mix together the mascarpone cheese and powdered sugar until smooth. Spread onto the cooled cookies and serve. Enjoy!
