Recipe: Espresso-Infused Tiramisu Cookies

These delicious espresso-infused tiramisu cookies are the perfect dessert or snack. The espresso adds a subtle flavor and the crunchy outside and chewy inside make them irresistible.

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons espresso powder
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar

Directions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
  4. Add the espresso powder to the butter mixture and mix until combined. Slowly add in the dry ingredients and mix until a dough forms.
  5. Fold in the chocolate chips and walnuts.
  6. Drop heaping tablespoonfuls of dough onto the prepared baking sheet, about two inches apart. Bake for 8-10 minutes, or until golden brown. Allow to cool completely.
  7. In a small bowl, mix together the mascarpone cheese and powdered sugar until smooth. Spread onto the cooled cookies and serve. Enjoy!
