Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup shredded coconut
  • For the Frosting
  • 1 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture alternately with the milk. Fold in the shredded coconut.
  3. Fill the prepared muffin cups with the batter and bake for 18 to 20 minutes in the preheated oven, or until a toothpick inserted into the center of a cupcake comes out clean. Cool in the pan set over a wire rack.
  4. To make the frosting: In a medium bowl, cream together the butter and powdered sugar until light and fluffy. Beat in the vanilla and salt. Gradually stir in the shredded coconut until frosting is of desired consistency. Spread over cooled cupcakes.
