Delicious Carrot Cake with Cream Cheese Icing

Cream Cheese Icing:
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup (1 stick) butter, softened
- 4 cups confectioners’ sugar
- 1 teaspoon pure vanilla extract
Directions:
- Preheat oven to 350°F. Grease and flour two 9-inch round baking pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, beat together oil, white sugar, and brown sugar until light and fluffy. Beat in eggs one at a time. Stir in the dry ingredients until just combined. Fold in carrots, vanilla, walnuts, and raisins. Divide batter between the prepared pans, and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.
- To make the cream cheese frosting, beat together cream cheese and butter until smooth. Add confectioners’ sugar and vanilla, and beat until light and fluffy. Spread frosting over cooled cake.
