  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup granulated white sugar
  • 1 cup light brown sugar
  • 4 large eggs
  • 3 cups grated carrots
  • 2 teaspoons pure vanilla extract
  • 1 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)
  • Cream Cheese Icing:

    • 2 (8 ounce) packages cream cheese, softened
    • 1/2 cup (1 stick) butter, softened
    • 4 cups confectioners’ sugar
    • 1 teaspoon pure vanilla extract

    Directions:

    1. Preheat oven to 350°F. Grease and flour two 9-inch round baking pans.
    2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
    3. In a large bowl, beat together oil, white sugar, and brown sugar until light and fluffy. Beat in eggs one at a time. Stir in the dry ingredients until just combined. Fold in carrots, vanilla, walnuts, and raisins. Divide batter between the prepared pans, and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.
    4. To make the cream cheese frosting, beat together cream cheese and butter until smooth. Add confectioners’ sugar and vanilla, and beat until light and fluffy. Spread frosting over cooled cake.
