Ingredients:

  • 3 cups unsweetened shredded coconut
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 teaspoon salt
  • 1/2 cup semisweet chocolate chips (optional)

Directions:

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded coconut, sugar, vanilla extract, egg whites, and salt. Stir until ingredients are fully combined.
  3. Scoop out 1-2 tablespoons of the mixture and form it into a mounded cookie shape. Place each cookie on the lined baking sheet. Repeat until all of the mixture is used.
  4. Bake in preheated oven for 10-12 minutes, or until the cookies are golden brown on the edges. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
  5. If desired, melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring between each increment, until the chips are melted and smooth.
  6. Dip each macaroon into the melted chocolate and place back onto the parchment paper. Allow the chocolate to set before serving.
