Ingredients:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated white sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup fresh key lime juice
  • 1 tablespoon grated key lime zest
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Additional key lime zest for garnish (optional)

Directions:

  1. Preheat oven to 325°F. Grease a 9-inch springform pan with butter and set aside.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared springform pan and set aside.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract, eggs, key lime juice, and key lime zest and beat until fully combined. Pour mixture into the prepared pan and spread evenly.
  4. Bake in preheated oven for 45 minutes. Turn oven off and let the cheesecake cool in the oven for 1 hour. Refrigerate overnight.
  5. In a medium bowl, beat heavy cream and powdered sugar until stiff peaks form. Spread over chilled cheesecake and garnish with additional key lime zest, if desired.
