Ingredients:

Cake:
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 2 Tablespoons cocoa powder
– 1/2 cup vegetable oil
– 1/2 cup granulated sugar
– 2 large eggs
– 1/2 cup buttermilk
– 2 teaspoons vanilla extract
– 1 teaspoon red food coloring

Cream Cheese Filling:
– 8 ounces cream cheese, softened
– 1/2 cup butter, softened
– 1 cup confectioners’ sugar
– 1 teaspoon vanilla extract

Cream Cheese Frosting:
– 8 ounces cream cheese, softened
– 4 Tablespoons butter, softened
– 2 cups confectioners’ sugar
– 1 teaspoon vanilla extract

Directions:

  1. Preheat the oven to 350 degrees F. Grease a 9-inch springform pan and set aside.

  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt and cocoa powder.

  3. In a separate bowl, whisk together the oil, sugar, eggs, buttermilk, vanilla and food coloring.

  4. Slowly add the wet ingredients to the dry ingredients and whisk until fully combined.

  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.

  6. Allow the cake to cool completely before removing from the pan.

  7. To make the cream cheese filling, beat the cream cheese and butter together until light and fluffy. Beat in the confectioners’ sugar and vanilla extract until fully combined.

  8. To assemble the cake, place one layer of the red velvet cake on a cake stand or platter. Spread half of the cream cheese filling over the cake. Place the second layer of cake on top and spread the remaining cream cheese filling over the top.

  9. To make the cream cheese frosting, beat the cream cheese and butter together until light and fluffy. Beat in the confectioners’ sugar and vanilla extract until fully combined.

  10. Spread the frosting over the top and sides of the cake.

  11. Refrigerate for at least 1 hour before serving. Enjoy!
