Cranberry-Banana Bread
This moist and delicious Cranberry-Banana Bread is a perfect treat for any occasion. With the combination of sweet bananas and tart cranberries, this easy to make bread will be a hit with the whole family.
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 3/4 cup light brown sugar, packed
- 2 large eggs
- 3 ripe bananas, mashed
- 1 cup fresh cranberries, chopped
- 1/2 cup chopped walnuts (optional)
Directions:
- Preheat oven to 350 degrees F. Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder and salt. Set aside.
- In the bowl of a stand mixer, cream together butter and brown sugar until light and fluffy. Add in eggs, one at a time, beating until fully incorporated. Add in mashed bananas and mix until combined.
- Gradually add in flour mixture, beating until just combined. Stir in cranberries and walnuts (if using).
- Pour batter into prepared pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving. Enjoy!
