Cranberry-Banana Bread

This moist and delicious Cranberry-Banana Bread is a perfect treat for any occasion. With the combination of sweet bananas and tart cranberries, this easy to make bread will be a hit with the whole family.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 cup fresh cranberries, chopped
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350 degrees F. Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder and salt. Set aside.
  3. In the bowl of a stand mixer, cream together butter and brown sugar until light and fluffy. Add in eggs, one at a time, beating until fully incorporated. Add in mashed bananas and mix until combined.
  4. Gradually add in flour mixture, beating until just combined. Stir in cranberries and walnuts (if using).
  5. Pour batter into prepared pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow to cool before serving. Enjoy!
