Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter, cold and cut into small cubes
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup toasted coconut flakes

Directions:

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, and salt. Add the butter cubes and use a pastry blender or your fingers to incorporate the butter into the dry ingredients until the mixture resembles coarse meal.
  3. Add the vanilla extract, shredded coconut, and toasted coconut flakes and mix until combined. Knead the dough a few times until the ingredients are completely incorporated.
  4. Roll the dough into a log, about 2 inches in diameter, then wrap in plastic wrap and place in the fridge for 30 minutes.
  5. Unwrap the dough log and cut into 1/4 inch slices. Place the slices onto the prepared baking sheets, about 1 inch apart.
  6. Bake in preheated oven for 12-14 minutes, until the edges of the cookies are lightly golden brown. Allow to cool on the baking sheets for 10 minutes before transferring to a wire rack to cool completely.
  7. Store in an airtight container at room temperature for up to a week.
