Coconut-Flavored Shortbread Cookies

Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter, cold and cut into small cubes
- 1 teaspoon vanilla extract
- 1/4 cup shredded unsweetened coconut
- 1/4 cup toasted coconut flakes
Directions:
- Preheat oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, whisk together the flour, sugar, and salt. Add the butter cubes and use a pastry blender or your fingers to incorporate the butter into the dry ingredients until the mixture resembles coarse meal.
- Add the vanilla extract, shredded coconut, and toasted coconut flakes and mix until combined. Knead the dough a few times until the ingredients are completely incorporated.
- Roll the dough into a log, about 2 inches in diameter, then wrap in plastic wrap and place in the fridge for 30 minutes.
- Unwrap the dough log and cut into 1/4 inch slices. Place the slices onto the prepared baking sheets, about 1 inch apart.
- Bake in preheated oven for 12-14 minutes, until the edges of the cookies are lightly golden brown. Allow to cool on the baking sheets for 10 minutes before transferring to a wire rack to cool completely.
