Chai-Spiced Shortbread Cookies

Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup turbinado sugar, for rolling
Directions:
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cinnamon, cardamom, ginger, cloves, nutmeg, and salt. Set aside.
- In a large bowl, use an electric mixer to beat the butter and granulated sugar until light and fluffy, about 2 minutes. Add the vanilla and almond extracts and beat until combined. Add the dry ingredients and mix until the dough comes together.
- Transfer the dough to a lightly floured work surface and knead a few times until smooth. Divide the dough into 2 equal pieces and shape each piece into a log about 10 inches long. Roll the logs in the turbinado sugar until completely coated. Wrap in plastic wrap and chill for 1 hour.
- Slice the logs into 1/4-inch thick rounds. Place the cookies on the prepared baking sheets, spacing about 1 inch apart. Bake for 12 to 15 minutes, until the edges are lightly golden. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
