Coconut & Pineapple Pina Colada Pancakes

Ingredients:
- 1 ¾ cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup coconut milk
- 1 teaspoon rum extract
- 2 eggs, lightly beaten
- 4 tablespoons butter, melted
- ¾ cup chopped pineapple
- ½ cup sweetened shredded coconut
Directions:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the coconut milk, rum extract, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and whisk until the batter is just combined.
