Ingredients:

  • 1 cup flour
  • 1/2 cup shredded coconut
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon coconut oil
  • 1 mango, peeled and diced
  • 1 tablespoon honey

Directions:

  1. In a large bowl, combine the flour, coconut, sugar, baking powder, and salt. Stir until combined.
  2. In a separate bowl, whisk together the milk and coconut oil.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Heat a large non-stick skillet over medium heat. Add 1/4 cup of the batter to the skillet for each flapjack and cook for 1-2 minutes per side, or until golden brown.
  5. Meanwhile, in a small bowl, mash the diced mango until it is a chunky purée. Stir in the honey.
  6. To serve, top each flapjack with the mango topping.
