Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup coconut oil
  • 1 cup cane sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup coconut milk
  • 1/2 cup shredded coconut
  • 1/2 cup chopped almonds

Directions:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan with coconut oil.
  2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  3. In a large bowl, cream together the coconut oil and sugar until light and fluffy. Add the vanilla extract and mix to combine.
  4. Add the flour mixture to the bowl and mix until combined. Slowly stir in the coconut milk and mix until just combined. Do not over mix.
  5. Gently fold in the shredded coconut and chopped almonds. Transfer the batter to the prepared cake pan.
  6. Bake for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean. Let cool for 10 minutes before serving.
