  • 1 cup unsalted butter, at room temperature
  • 3/4 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Directions:

  1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  2. In the bowl of an electric mixer, cream together the butter and sugars until light and fluffy, about 2 minutes.
  3. Add the eggs, one at a time, beating until combined. Mix in the vanilla.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  5. Stir in the oats and raisins, mixing until evenly distributed.
  6. Using a cookie scoop, scoop the dough onto the prepared baking sheets, about 2 inches apart. Bake for 12-14 minutes, or until the edges are lightly golden brown.
  7. Remove from oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Enjoy!
