Ingredients:
-1/2 cup (1 stick) unsalted butter, softened
-1/2 cup light brown sugar
-1/4 cup granulated sugar
-2 large eggs
-1 teaspoon vanilla extract
-1 1/2 cups mashed ripe bananas
-1 teaspoon baking soda
-1 teaspoon ground cinnamon
-1/4 teaspoon ground nutmeg
-1/4 teaspoon salt
-1 1/2 cups all-purpose flour
-1/2 cup chopped walnuts
-1/4 cup rolled oats
-1/4 cup light brown sugar
-1 teaspoon ground cinnamon
Directions:
- Preheat the oven to 350°F and lightly grease a 9×5 inch loaf pan.
- In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the eggs and vanilla extract.
- Add the mashed bananas, baking soda, cinnamon, nutmeg, and salt. Beat until combined.
- Add the flour and beat until just combined.
- In a separate bowl, mix together the walnuts, oats, brown sugar, and cinnamon until combined.
