Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 cup peeled and grated apples
  • 1 cup chopped walnuts
  • 1/2 cup raisins
  • 1/2 cup chopped dates

For the Glaze:

  • 2 tablespoons butter, melted
  • 2 tablespoons milk
  • 1 cup confectioners’ sugar
  • 1 teaspoon ground cinnamon

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, stir together flour, baking soda, baking powder, cinnamon and salt.
  3. In a large bowl, beat together oil, white sugar and brown sugar until creamy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually stir the dry ingredients into the wet ingredients. Mix in grated carrots, apples, walnuts, raisins and dates.
  5. Spread batter into prepared pan.
  6. Bake for 40 to 50 minutes in preheated oven, until a toothpick inserted into the center of the cake comes out clean. Let cool.
  7. To make the glaze, mix together butter, milk, confectioners’ sugar and cinnamon. Drizzle over cooled cake. Slice and serve.
