Cinnamon Cream Cheese Frosted Pumpkin Spice Cupcakes

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon ground cinnamon
  • 3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12 cup muffin tin.
  2. In a medium bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, allspice, cloves and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the pumpkin and vanilla. Beat in the dry ingredients alternately with the milk.
  4. Fill the muffin cups about two-thirds full. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a cupcake comes out clean.
  5. To make the frosting, beat together the cream cheese, butter, cinnamon, confectioners’ sugar and vanilla until light and fluffy. Frost the cooled cupcakes.
