Chocolate Peanut Butter Cupcakes

Ingredients:
- 2 cups all-purpose flour
- 2/3 cup cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, at room temperature
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/2 cup creamy peanut butter
- 1/2 cup heavy cream
Directions:
- Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
- In the bowl of an electric mixer, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, beating after each addition. Stir in the vanilla extract.
- Alternately add the dry ingredients and the buttermilk to the butter mixture, beginning and ending with the dry ingredients. Beat until just combined.
- Divide the batter evenly among the prepared cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Let cupcakes cool completely before frosting.
- To make the frosting, combine the peanut butter and cream in the bowl of an electric mixer. Beat on medium speed until light and fluffy. Spread or pipe onto cooled cupcakes.
