Chocolate Peanut Butter Cupcakes

Ingredients:

  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, at room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup creamy peanut butter
  • 1/2 cup heavy cream

Directions:

  1. Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
  3. In the bowl of an electric mixer, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, beating after each addition. Stir in the vanilla extract.
  4. Alternately add the dry ingredients and the buttermilk to the butter mixture, beginning and ending with the dry ingredients. Beat until just combined.
  5. Divide the batter evenly among the prepared cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  6. Let cupcakes cool completely before frosting.
  7. To make the frosting, combine the peanut butter and cream in the bowl of an electric mixer. Beat on medium speed until light and fluffy. Spread or pipe onto cooled cupcakes.
