Ingredients:
- 1/2 cup (125 ml) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons cocoa powder
- 1/2 cup (125 ml) vegetable oil
- 1 cup (250 ml) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (125 ml) buttermilk
- 1 teaspoon white vinegar
- 2 tablespoons red food coloring
- 1 cup (250 ml) heavy cream
- 4 ounces (115 g) dark chocolate, chopped
Directions:
- Preheat oven to 375°F (190°C). Grease a 10×15-inch jelly roll pan and line with parchment paper. Set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
- In a large bowl, beat together the vegetable oil and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
- Stir in the buttermilk, vinegar, and red food coloring until evenly combined. Gradually add the dry ingredients and mix until just combined.
- Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and transfer to a wire rack to cool completely.
- In a medium saucepan, heat the heavy cream until just simmering. Remove from heat and stir in the chopped chocolate until melted and smooth. Set aside to cool slightly.
- Once the cake is cooled, spread the chocolate ganache over the cake. Starting at one of the short ends, carefully roll the cake up into a log. Slice and serve.
