Ingredients:
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 3 (8 ounces) packages cream cheese, softened
- 3/4 cup white sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 1 tablespoon instant espresso powder
- 1/2 cup heavy cream
- 4 ounces semi-sweet baking chocolate
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the prepared pan.
- In a large bowl, beat cream cheese, sugar, eggs, vanilla, and espresso powder until smooth. Pour into the prepared crust.
- Bake for 40 minutes in the preheated oven. Let cool to room temperature.
- In a medium saucepan, heat cream until it just begins to simmer. Remove from heat and add chocolate. Stir until smooth.
- Pour ganache over cooled cheesecake. Refrigerate for at least 2 hours before serving.
