Ingredients:

  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 3 (8 ounces) packages cream cheese, softened
  • 3/4 cup white sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon instant espresso powder
  • 1/2 cup heavy cream
  • 4 ounces semi-sweet baking chocolate

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese, sugar, eggs, vanilla, and espresso powder until smooth. Pour into the prepared crust.
  4. Bake for 40 minutes in the preheated oven. Let cool to room temperature.
  5. In a medium saucepan, heat cream until it just begins to simmer. Remove from heat and add chocolate. Stir until smooth.
  6. Pour ganache over cooled cheesecake. Refrigerate for at least 2 hours before serving.
