Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup semi-sweet chocolate chips
  • 8 slices bacon
  • 1/4 cup brown sugar

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. In the bowl of an electric mixer, beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
  4. Add the dry ingredients to the wet ingredients and beat until just combined. Slowly add the milk and mix until smooth. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
