Ingredients:

  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • 3 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 16 ounces cream cheese, softened
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/3 cup Irish cream liqueur
  • 1 cup heavy cream

Directions:

  1. Preheat oven to 325°F. Grease a 9-inch springform pan and set aside.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, cocoa powder, and sugar. Mix until combined, then press into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese until light and fluffy. Add the sugar and vanilla extract and mix until combined. Add the eggs, one at a time, and mix until fully combined. Add the Irish cream liqueur and mix until fully incorporated.
  4. In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Pour the filling into the prepared crust.
  5. Bake for 40-45 minutes, or until the center is set. Let cool completely before serving.
