Cheesy Philly Cheesesteak Quiche with Bell Peppers

Ingredients:

  • 1 9-inch pre-made pastry pie crust
  • 1/2 pound thinly sliced deli roast beef
  • 1/4 cup diced yellow onion
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3/4 cup grated cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

  1. Preheat oven to 375 degrees F. Place the pastry pie crust in a 9-inch pie plate.
  2. In a large skillet over medium-high heat, cook the roast beef and onion for about 5 minutes, or until the beef is cooked through and the onion is softened. Add the bell peppers and cook for an additional 2 minutes.
  3. Spread the beef and pepper mixture in the bottom of the pie crust. Sprinkle the cheeses over the top.
  4. In a medium bowl, whisk together the eggs, milk, garlic powder, salt and pepper. Pour the egg mixture over the beef and cheese.
  5. Bake in preheated oven for 30 minutes, or until the top is golden brown and the center is set.
  6. Let cool slightly before serving.
