Carrot Pineapple Cake with Coconut Cream Cheese Icing

Directions:
- Preheat oven to 350°F. Grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix together oil and sugar until combined. Add eggs and vanilla extract, stirring until blended.
- Add dry ingredients to wet ingredients and mix until just combined. Fold in carrots and pineapple. Pour batter into prepared pan and spread evenly.
