  • 3/4 cup vegetable oil
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • Coconut Cream Cheese Icing:

  • 1/2 cup butter, softened
  • 1 (8-ounce) package cream cheese, softened
  • 3 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sweetened flaked coconut
  • Directions:

    1. Preheat oven to 350°F. Grease and flour a 9×13-inch baking pan.
    2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix together oil and sugar until combined. Add eggs and vanilla extract, stirring until blended.
