Cardamom and Orange Zest Milktart

This classic South African dessert has been given a delicious twist with the addition of cardamom and orange zest. Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 ½ sticks unsalted butter, cubed and chilled
  • 3 tablespoons cold water
  • 2 tablespoons granulated sugar
  • 1 teaspoon cardamom
  • 1 teaspoon orange zest
  • 2 cups whole milk
  • 6 egg yolks
  • ¼ cup cornstarch
  • 1 tablespoon butter

Directions:

  1. Preheat oven to 350°F. In a large bowl, whisk together the flour, salt, and cubed butter. Add the cold water, and mix until the dough forms a ball. Place dough on a lightly floured surface and roll out into a 12-inch circle. Place the dough in a 9-inch tart pan. Press the dough into the pan and up the sides. Prick the bottom with a fork. Bake for 15 minutes.
  2. In a medium saucepan, whisk together the sugar, cardamom, orange zest, milk, and egg yolks. Heat over medium heat until mixture is almost boiling. Whisk in the cornstarch and butter. Reduce heat to low and cook until mixture thickens. Pour the custard into the prepared crust.
  3. Bake for 25 minutes. Let cool before serving.
