Caramel Popcorn Cupcakes with Drizzle

Ingredients:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/2 cup popcorn, lightly salted and popped
- 1/2 cup caramel sauce, for the drizzle
Directions:
- Preheat the oven to 350°F. Line 12 muffin tins with cupcake liners and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then add the vanilla. Alternate adding the flour mixture and the buttermilk to the butter mixture, beginning and ending with the flour. Beat until just combined.
- Fold in the popcorn. Divide the batter evenly among the 12 muffin tins, filling each 2/3 full. Bake for 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Allow the cupcakes to cool completely before topping with the caramel drizzle. Heat the caramel sauce in the microwave for 15-20 seconds, stirring every few seconds, until the sauce is just thin enough to drizzle. Drizzle the cupcakes with the caramel sauce.
- Allow the caramel to set before serving.
