Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup popcorn, lightly salted and popped
  • 1/2 cup caramel sauce, for the drizzle

Directions:

  1. Preheat the oven to 350°F. Line 12 muffin tins with cupcake liners and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then add the vanilla. Alternate adding the flour mixture and the buttermilk to the butter mixture, beginning and ending with the flour. Beat until just combined.
  4. Fold in the popcorn. Divide the batter evenly among the 12 muffin tins, filling each 2/3 full. Bake for 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  5. Allow the cupcakes to cool completely before topping with the caramel drizzle. Heat the caramel sauce in the microwave for 15-20 seconds, stirring every few seconds, until the sauce is just thin enough to drizzle. Drizzle the cupcakes with the caramel sauce.
  6. Allow the caramel to set before serving.
