Butterscotch Cheesecake with Butterscotch Drizzle
This decadent dessert is sure to satisfy your sweet tooth! A creamy cheesecake is topped with a layer of rich butterscotch and finished off with a tantalizing butterscotch drizzle. Enjoy this delicious treat with family and friends!
Ingredients:
- 1/2 cup graham cracker crumbs
- 3 tablespoons butter, melted
- 2 packages (8 oz. each) cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 2 large eggs
- 1/2 cup butterscotch chips
- 1/4 cup heavy cream
- 1/4 cup butterscotch chips, melted
Directions:
- Preheat oven to 350°F. Grease a 9-inch springform pan and set aside.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press crust into the bottom of the prepared pan and bake for 8 minutes. Set aside to cool.
- In a large bowl, use an electric mixer to beat together cream cheese, sugar, salt, and vanilla extract until light and fluffy. Beat in eggs one at a time until well combined. Fold in 1/2 cup of butterscotch chips.
- Pour filling into prepared crust and bake for 35-40 minutes, or until center is almost set. Let cool.
- In a small saucepan, heat heavy cream over medium-low heat until steaming. Remove from heat and stir in 1/4 cup melted butterscotch chips. Stir until mixture is smooth and creamy. Drizzle over cooled cheesecake.
- Refrigerate for at least 4 hours before serving.
