Blood Orange Cheesecake with Dark Chocolate Drizzle

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 1/2 (8 ounce) packages cream cheese, softened
  • 3/4 cup white sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh blood orange juice
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup semisweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter in a bowl, and mix until evenly blended. Press mixture into the bottom and sides of the springform pan.
  3. Beat cream cheese in a large bowl with an electric mixer until smooth. Gradually blend in the sugar and flour. Beat in the blood orange juice, eggs, and vanilla until smooth.
  4. Pour filling into the prepared crust. Bake in preheated oven for 45 minutes, or until center is almost set.
  5. Melt the chocolate chips in a double boiler. Once melted, drizzle over the cooled cheesecake.
