Ingredients:
- 1 pre-made cornbread crust
- 1 cup BBQ pulled pork
- 3 large eggs
- 1 cup shredded cheese
- 1/2 cup milk
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup diced jalapeno pepper
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Directions:
- Preheat oven to 375 degrees F. Grease a 9-inch pie dish with butter.
- Layer the BBQ pulled pork into the bottom of the cornbread crust. Sprinkle on the diced onion, bell pepper, and jalapeno pepper.
- In a medium bowl, whisk together the eggs, milk, cheese, butter, garlic powder, smoked paprika, salt, and pepper. Pour the egg mixture over the pulled pork and vegetables.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is golden brown and the center is set.
