Banoffee Pie with a Layered Cookie Dough Crust

This decadent dessert is a delicious combination of creamy banoffee pie and a crunchy layered cookie dough crust. The cookie dough crust provides a great contrast to the luscious filling, creating a sweet and savory flavor combination. Start by making the cookie dough, then layer it in the pie dish and bake until golden brown. Once cooled, prepare the banoffee pie filling and layer it on top. Let it chill and enjoy this sweet treat!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup dark brown sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup whole or 2% milk
  • 1 teaspoon vanilla extract
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup heavy cream
  • 3 tablespoons confectioners’ sugar
  • 2 bananas, sliced
  • 1/2 cup toffee bits

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch pie dish with butter.
  2. In a medium bowl, whisk together the flour, brown sugar, butter, baking powder and salt until it forms a crumbly mixture. Add in the milk and vanilla extract and mix until it forms a dough.
  3. Press the cookie dough into the prepared pie dish. Bake for 20 minutes or until the edges are golden brown. Let cool completely.
  4. In a medium bowl, whisk together the condensed milk and heavy cream until light and fluffy. Fold in the confectioners’ sugar. Spread the mixture over the cooled cookie dough crust.
  5. Top with sliced bananas and toffee bits. Refrigerate for at least 3 hours or overnight before serving.
