This delicious Banana Oat Bran Bread is a great way to use up ripe bananas and get a healthy dose of fiber. The combination of oat bran, bananas, and nuts make for a moist and tasty loaf of bread that is perfect for breakfast, a snack, or even dessert.

Ingredients:

  • 2 cups oat bran
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup vegetable oil
  • 3/4 cup packed light brown sugar
  • 2 large eggs, lightly beaten
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup chopped walnuts or pecans (optional)

Directions:

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan and set aside.
  2. In a large bowl, whisk together oat bran, flour, baking powder, salt, and cinnamon.
  3. In a separate bowl, combine oil, sugar, eggs, and mashed bananas. Stir until well blended.
