Almond and Sour Cherry Cookies

Ingredients:

  • 2 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 and 1/2 cups dried sour cherries, chopped

Directions:

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the egg and almond extract until combined.
  4. Mix in the flour mixture until just combined. Stir in the cherries.
  5. Drop the dough by the tablespoonful onto the prepared baking sheets. Bake for 10-12 minutes, until the edges are lightly golden.
  6. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  7. Store in an airtight container for up to 5 days.
