Vegan Banoffee Pie is a delicious and cruelty-free version of the classic dessert. This recipe features a biscuit base made with vegan butter, a layer of rich and creamy coconut caramel, slices of fresh bananas, and a layer of whipped coconut cream on top. The combination of flavors and textures create a perfectly indulgent dessert that is suitable for vegans and non-vegans alike.

Ingredients:

  • 1 1/2 cups crushed vegan digestive biscuits
  • 1/3 cup melted coconut oil
  • 1 can (400ml) coconut cream
  • 1/2 cup coconut sugar
  • 3-4 ripe bananas
  • 1/2 cup vegan whipped cream
  • Cacao powder, for dusting

Instructions:

  1. Combine the crushed biscuits and melted coconut oil, then press the mixture into the base of a 9-inch pie dish.
  2. Chill in the fridge for at least 30 minutes.
  3. In a saucepan, simmer the can of coconut cream and coconut sugar for 30-40 minutes until it turns into a thick caramel.
  4. Spread the caramel over the biscuit base and let it cool.
  5. Slice the bananas and arrange them over the caramel.
  6. Whip the vegan cream and spread it over the bananas.
  7. Dust with cacao powder before serving.
