Red Velvet Cake with Cream Cheese Swirl Recipe

Ingredients:

  • 2 and 1/2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 and 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract

For the Cream Cheese Swirl:

  • 8 oz. cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate mixing bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Pour 2/3 of the batter into a greased 9×13 inch baking pan and spread it out evenly.
  6. In a separate mixing bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth.
  7. Spoon dollops of the cream cheese mixture over the red velvet batter in the pan.
  8. Pour the remaining 1/3 of the red velvet batter over the cream cheese dollops and use a knife to swirl the cream cheese mixture into the red velvet batter.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool completely in the pan before slicing and serving.
