Ingredients:
- 2 and 1/2 cups all-purpose flour
- 1 and 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 and 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
For the Cream Cheese Swirl:
- 8 oz. cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (180°C).
- In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
- In a separate mixing bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Pour 2/3 of the batter into a greased 9×13 inch baking pan and spread it out evenly.
- In a separate mixing bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth.
- Spoon dollops of the cream cheese mixture over the red velvet batter in the pan.
- Pour the remaining 1/3 of the red velvet batter over the cream cheese dollops and use a knife to swirl the cream cheese mixture into the red velvet batter.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan before slicing and serving.
