Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk ricotta cheese
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup confectioners’ sugar
  • 1 tablespoon fresh lemon juice

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the ricotta cheese, lemon juice, lemon zest, and vanilla extract.
  6. Gradually mix in the dry ingredients until just combined.
  7. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. While the cake is baking, whisk together the confectioners’ sugar and lemon juice to make the glaze.
