Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tablespoon lemon zest
  • 2 tablespoons culinary lavender buds
  • 1/4 cup fresh lemon juice
  • 1/2 cup confectioners’ sugar

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the buttermilk, lemon zest, and lavender buds.
  6. Gradually mix in the dry ingredients until just combined.
  7. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. While the cake is baking, whisk together the lemon juice and confectioners’ sugar to make the glaze.
  9. Once the cake has finished baking, let it cool in the pan for 5 minutes, then remove it from the pan and transfer it to a wire rack.
  10. While the cake is still warm, poke holes in the top with a fork and drizzle the glaze over the cake.
  11. Garnish with fresh lavender flowers and serve.
