Ingredients:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 1-2 tbsp red food coloring
- 1 tsp white vinegar
- Cream cheese frosting (recipe below)
Instructions:
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- In another mixing bowl, beat together the oil, buttermilk, eggs, vanilla extract, and red food coloring until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the vinegar.
- Pour the batter into two 9-inch cake pans lined with parchment paper.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cakes cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
- Once cooled, frost the cake with cream cheese frosting and serve.
Cream Cheese Frosting: Ingredients:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions:
- In a mixing bowl, beat the cream cheese and butter until smooth.
- Add the powdered sugar and vanilla extract and beat until well combined and fluffy.
- Use to frost the cooled cake.
