Classic Red Velvet Cake

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1-2 tbsp red food coloring
  • 1 tsp white vinegar
  • Cream cheese frosting (recipe below)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. In another mixing bowl, beat together the oil, buttermilk, eggs, vanilla extract, and red food coloring until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the vinegar.
  5. Pour the batter into two 9-inch cake pans lined with parchment paper.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Let the cakes cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
  8. Once cooled, frost the cake with cream cheese frosting and serve.

Cream Cheese Frosting: Ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. In a mixing bowl, beat the cream cheese and butter until smooth.
  2. Add the powdered sugar and vanilla extract and beat until well combined and fluffy.
  3. Use to frost the cooled cake.
