Chicken Pot Pie

This classic comfort food is made with a creamy chicken and vegetable filling, topped with a layer of puff pastry.

Ingredients

  • 1 sheet puff pastry, thawed
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 cups cooked chicken, shredded
  • Salt and pepper

Instructions:

  1. Preheat the oven to 400°F.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the onion, carrots, and celery and sauté until softened, about 5 minutes.
  4. Sprinkle the flour over the vegetables and stir to combine.
  5. Gradually stir in the chicken broth and heavy cream, stirring constantly until the mixture thickens.
  6. Add the cooked chicken and stir to combine.
  7. Season with salt and pepper to taste.
  8. Pour the chicken mixture into a 9-inch pie dish.
