Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, cut into pieces
  • 1 1/2 cups semisweet chocolate chips
  • 1 cup granulated sugar
  • 1/4 cup Baileys Irish Cream
  • 3 large eggs
  • 1 tablespoon instant espresso powder
  • 1/4 cup chopped walnuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large saucepan, melt the butter and chocolate chips over low heat, stirring until smooth.
  4. Remove from heat and stir in the sugar and Baileys. Add the eggs one at a time, whisking after each addition.
  5. Stir in the espresso powder and chopped walnuts (if using).
  6. Fold in the dry ingredients until just combined.
  7. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool in the pan.
