Ingredients:
- 2 cups all-purpose flour
- 1 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup almond milk (or other non-dairy milk)
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 tablespoon apple cider vinegar
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan with cooking spray or vegan butter.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In a separate mixing bowl, whisk together the almond milk, vegetable oil, vanilla extract, and apple cider vinegar.
- Pour the wet ingredients into the dry ingredients and mix until the batter is smooth and free of lumps.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
