Vegan Vanilla Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup almond milk (or other non-dairy milk)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan with cooking spray or vegan butter.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, whisk together the almond milk, vegetable oil, vanilla extract, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and mix until the batter is smooth and free of lumps.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Serve the vegan vanilla cake with your favorite frosting and toppings.
