Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup buttermilk
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 2 teaspoons vanilla extract
For the streusel topping:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, chilled and cubed
- 1 teaspoon ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch (23cm) baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the sugar and butter together until light and fluffy. Add in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the buttermilk and mixing well after each addition.
- In a separate small bowl, mix together the streusel topping ingredients with a fork or pastry cutter until crumbly.
- Pour half of the batter into the prepared pan and sprinkle with half of the streusel mixture. Top with the remaining batter and sprinkle with the remaining streusel mixture.
- Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool for 10-15 minutes before serving.
