Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup buttermilk
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract

For the streusel topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, chilled and cubed
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch (23cm) baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the sugar and butter together until light and fluffy. Add in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk and mixing well after each addition.
  5. In a separate small bowl, mix together the streusel topping ingredients with a fork or pastry cutter until crumbly.
  6. Pour half of the batter into the prepared pan and sprinkle with half of the streusel mixture. Top with the remaining batter and sprinkle with the remaining streusel mixture.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool for 10-15 minutes before serving.
