Classic Buttermilk Pancakes

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  2. In a separate bowl, beat the eggs and then add the buttermilk, melted butter, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Heat a non-stick pan or griddle over medium heat.
  5. Scoop 1/4 cup batter onto the pan or griddle and cook until bubbles form on the surface and the edges start to set, then flip and cook until the other side is golden brown.
  6. Serve hot with butter and maple syrup.
