Peanut banana bread

Ingredients

  • 4 very ripe bananas, mashed
  • 125g plain flour
  • 100g crunchy peanut butter
  • 100g soft brown sugar
  • 75g wholemeal flour
  • 50g butter, softened
  • 2 eggs
  • 2 tsp baking powder

Frosting

  • 200g icing sugar
  • 75g smooth peanut butter
  • 75g soft cheese
  • 75g butter
  • 1 tbsp toasted chopped peanuts, to finish (optional)

Directions

  1. Heat the oven to 180C/fan 160C/gas 4.
  2. Put the butter, crunchy peanut butter, sugar, flours, baking powder, eggs and bananas in a bowl and beat together with an electric beater.
  3. Spoon into a lined and buttered 450g loaf tin.
  4. Bake for 1¼-1½ hours, or until a skewer comes out clean. Cool for 10 minutes in the tin then lift out and cool completely on a rack.
  5. To add some extra flare … make a frosting, by beating butter until soft, then beat in the soft cheese and peanut butter followed by the icing sugar. Frost the loaf and scatter over the peanuts, if you like.
